Terre Tollesi or Tullum

The Identifies a Protected Designation of Origin "Terre Tollesi" or "Tullum" that, inside, contains different types of wines: White, Superiore White, Red, Red Riserva , Novello, Pecorino, Passerina, Falanghina, Merlot, Cabernet Sauvignon, Sangiovese, White Passito, Red Passito, Spumante.

Grapes

The Bianco and Bianco Superiore wines are produced from at least 75% of grapes from Trebbiano Toscano and/or Trebbiano Abruzzese vines, while for the Passito Bianco Moscato and Malvasia are used, with a share of at least 90%, alone or in combination. For Rosso, Rosso Riserva, Passito Rosso and Novello, on the other hand, 90% (minimum) of Montepulciano is required. On the other hand, Chardonnay is the reference grape for spumante, which requires a minimum quota of 60%. Then there are the productions with the indication of the vine, in which this must represent 90% of the grapes. Finally, in all wines, the use of other similar grape varieties, suitable for cultivation in Abruzzo, is allowed to complete the missing quotas.

Physicochemical and Organoleptic properties

A detailed description of the organoleptic characteristics of the individual Tullum wines can be found in the specification. In general, it can be observed that the white wines of the denomination are a pale straw yellow colour; the olfactory notes are rich in floral and fruity scents, intense, fresh and pleasant, which in the single-variety variants are enriched by the peculiarities of the specific grapes. The red wines, on the other hand, are harmonious and elegant, have an intense ruby red hue, veined with slight purplish nuances, and tend towards garnet as they age; the aroma recalls scents typical of red fruits and vegetable notes; the taste is dry and well-structured, rightly tannic.

Grape production area

The production area is rather limited and coincides only with the municipality of Tollo, in the province of Chieti.

Specificity and historical notes

The ancient wine growing tradition of Tollo, already strong in Roman times, is witnessed by numerous archaeological finds of wine dolia and wine cells.
