Sforzato di Valtellina o Sfursat di Valtellina

The Sforzato di Valtellina or Sfursat di Valtellina (DOCG), is a red wine recognized with a protected designation of origin.


Grapes

The production of "Sforzato" must be carried out using 90% of the grapes of the Nebbiolo vine, locally known as Chiavennasca. The remaining quota, which may not exceed 10%, is made up of other non-aromatic red grapes, suitable for cultivation in Lombardy. The wine is placed on the market after at least 20 months of aging, 12 of which in wooden barrels.


Physicochemical and Organoleptic properties

"Sforzato di Valtellina" has a ruby red colour, enriched by garnet reflections. It has an intense and ample aroma, with hints of ripe fruit, and a very soft, dry and structured flavour. Aging in barrels also gives it a perception of wood. From the point of view of alcohol content, it reaches 14% vol.


Grape production area

The production area is inside the Valtellina, which has environmental and climatic characteristics particularly suitable for viticulture: the southern exposure, the protection of the Rhaetian and Orobian Alps, the relative proximity of Lake Como. This structure ensures constant ventilation and low rainfall, as well as excellent light.


Specificity and historical notes

The "Sforzato" is the result of grapes that are subjected to a long drying in the cold winter, after being harvested with a harvest characterized by careful sorting, which leads to select only the bunches intact. A tradition that has ancient roots, at least as much as those of viticulture, which is believed to have been present in Valtellina since the time of the Romans or at least the Lombards. Although the real engine of this cultivation were the Benedictine monks, who ordered and regulated it.
