Paestum
The Protected Geographical Indication "Paestum" indicates the following types of wine: white (also sparkling, sweet and raisin), red (also sparkling, sweet, raisin and Novelli), rosati (also sparkling and semi-sweet wine).
Grapes
The Protected Geographical Indication "Paestum" identifies wines obtained from vines suitable for cultivation in the "provincia of Salerno". The specification of the varieties Aglianico, Barbera, Coda di Volpe, Fiano, Greco, Moscato b., Piedirosso, Primitivo and Sciascinoso is reserved for wines obtained from grapes at least 85% of which come from the corresponding varieties. Up to a maximum of 15%, all the other vines suitable for cultivation in the "provincia di Salerno" can be used.
Physicochemical and Organoleptic properties
The white wines with the Protected Geographical Indication "Paestum" have a more or less intense straw yellow colour, with a fruity and floral bouquet and a dry and balanced flavour. The Passito version is distinguished by its variable colour, depending on the grape variety, and its semi-sweet wine or sweet taste. The red colour is ruby, more or less intense, combined with a fruity and floral aroma and a dry and balanced taste. The red berry Passito, on the other hand, has similar characteristics to the white berry Passito, with the exception of its colour. Finally, the Rosato is more or less intense pink in colour, with a floral odour and a dry and balanced taste. The minimum total alcoholic strength by volume is 10% vol. for White, 10.50% vol. for sparkling wines, 11% vol. for Rosé and Novello, 15% vol. for both Passito.

The production area of Paestum wines includes several municipalities in the "provincia di Salerno".
Specificity and historical notes
Paestum boasts a world-famous archaeological heritage. No less important is the wine-growing tradition, which since the times of the Greeks and Romans combines high quality wines and typical local products.
