The Protected Designation of Origin "Bianco dell'Empolese" is reserved for two types of wines: white and Vin Santo.
Grapes
The white wine is made up of at least 60% Trebbiano, white grapes may be used to produce up to a maximum of 40%; the Vin Santo, on the other hand, is made up of at least 60% Trebbiano Toscano, and white grapes may be used to produce up to a maximum of 40%, with the exception of Moscato Bianco.
Physicochemical and Organoleptic properties
The white wine (vol. 11%) has a more or less intense straw yellow colour, the aroma is delicate, fine and characteristic, the taste is dry, harmonious, fresh and delicate. The Vin Santo (vol. 17%) has a color from golden to amber more or less intense, the smell is intense, ethereal and characteristic, the flavor is dry or sweet, harmonious, soft, with a characteristic aftertaste.
Grape production area
The production area of "Bianco dell'Empolese' is included in some municipalities of the province of Florence and goes from flat to hilly, on deposits ranging from alluvial to marine. The pedology and orography are therefore very varied.
Specificity and historical notes
Viticulture in the area of "Bianco dell 'Empolese" dates back to Roman times. The link with the territory is deep and well rooted, then joined to the orography and to the changing pedology, makes the "Bianco dell 'Empolese" a product of undoubted quality.
