Brindisi
The Protected Designation of Origin "Brindisi", includes the following types of wine: Rosso (also novello and spumante) rosé (also spumante), bianco (also spumante), Negroamaro (also riserva, rosato and rosato spumante), Susumaniello, Chardonnay (also spumante), Malvasia bianca (also spumante), Fiano (also spumante), Sauvignon (also spumante).
Grapes
Red and rosé have at least 70% of Negroamaro, with which up to 30% of the grapes of the Malvasia nera di Brindisi, Susumaniello, Montepulciano, Sangiovese and other black grapes, suitable for cultivation in Puglia, can be used. The basic Negroamaro, red and rosé instead, are made up of at least 85% of Negroamaro, for the Susumaniello instead you need at least 85% of Susumaniello, the white then is made up of at least 80% of Chardonnay and white Malvasia, absolute or combined. For these wines, grapes from similarly colored berry varieties may be used (maximum 20%). For Chardonnay, Malvasia Bianca, Fiano and Sauvignon, at least 90% of the grapes of the similar vine are required, in competition with grapes of similarly coloured berry varieties (maximum 10%).
Physicochemical and Organoleptic properties
The red wines, basic red, Negroamaro, Susumaniello, Novello, (minimum total alcoholic strength by volume 12% vol. ) have a more or less intense ruby red color, characteristic, with possible violet reflections (Susumaniello); the smell is ethereal, intense and pleasant; the taste is characteristic, slightly vinous and with fruity notes. The rosés (12% vol. for the base and 11,50% for the spumante) have a more or less intense colour, the aroma is fruity, delicate and winy, the taste is harmonious and delicate. The sparkling versions have fine and persistent froth. The white wines (11% vol base and 11,50% spumante) are characterized by a more or less intense straw yellow color, the smell is delicate, slightly fruity, with possible notes of yeast, the flavor ranges from fresh and harmonious, to savory, to extrabrut. The sparkling versions have fine and persistent froth.
Grape production area
The production area of 'Brindisi'; is characterised by the presence of deep, clayey soils, which are favourable for retaining good quantities of water.
Specificity and historical notes
The wine-growing tradition in the "Brindisi" area developed more at the beginning of the 20th century, thanks to the first producers who sensed its potential.
