Cori

The Protected Designation of Origin "Cori" identifies the homonymous Lazio wine, produced in different variants: White, Red, Bellone, Nero Buono and Nero Buono Riserva.


Grapes

Cori Bianco is made from at least 50% Belllone grapes, 20% (minimum) from Malvasia del Lazio and 15% (minimum) from Greco Bianco. Other white grapes, suitable for cultivation in Lazio, may also be used, up to a maximum of 15%. Rosso, on the other hand, is made from Nero Buono (minimum 50%), Montepulciano (minimum 20%) and Cesanese di Affile and/or Cesanese comune (minimum 15%) grapes. In this case, too, other black grapes may be used, up to 15%. Finally, Bellone and Nero Buono (also Riserva) are produced from a base of at least 85% of grapes from the corresponding vine, to which others are added, with similarly colored berries, up to a maximum of 15%.


Physicochemical and Organoleptic properties

The white wine (minimum total alcoholic strength by volume of 11% vol.) is straw yellow, with different degrees of intensity; it has a characteristic and pleasant aroma and a dry, balanced and well-structured flavour. The white Bellone (12% vol.), on the other hand, associates greenish reflections with a straw-yellow hue; it shows a characteristic scent of the variety and a dry, balanced and savoury flavour. The Red (11. 5% vol. ) has a ruby red aspect, with violet reflections, associated with a fragrant and harmonious smell and a dry and soft taste, with good structure and persistence. The same taste characteristics as the Nero Buono (12% vol.), whose ruby colour tends to garnet with ageing and whose smell is delicate and characteristic, enhanced by hints of wild fruit.


Grape production area

The production area is located in central Lazio and is characterised by the presence of the Agro Pontino plain and the slopes of the Lepini mountains.


Specificity and historical notes

The city of "Cori" was one of the most important centers of the Volsci and was born around 1400 BC. Since pre-Roman times it has developed an important winemaking tradition, of which Cori wines are the fruit.
