Lambrusco Grasparossa di Castelvetro
"Lambrusco Grasparossa di Castelvetro" is a Protected Designation of Origin recognised for wines of the types Sparkling red, Spumante red, Sparkling rosè and Spumante rosè.
Grapes
The grapes used in the production of "Lambrusco Grasparossa di Castelvetro", in all its variants, must come from vineyards at least 85% of which are "Lambrusco Grasparossa" vines. Other varieties of the Lambrusco type, such as Malbo Gentile, can also be added, but for a share that must not exceed 15%.
Physicochemical and Organoleptic properties
The "Lambrusco Grasparossa di Castelvetro" wines all have a freshness of flavour and a fragrance of perfumes that give them a remarkable balance of taste. They are also accompanied by lively and evanescent foam. The Spumante wines (11% vol.), both red and rosè, have a pleasant, fine, gentle, floral, ample and composite aroma and a taste from brut nature to sweet, full-bodied and fresh, savoury and harmonious. The sparkling red (10.5% vol.) has an intense ruby colour and a vinous aroma, with a characteristic fruity perfume, while the flavour is full-bodied, fresh, savoury and harmonious and can be dry, mouthful or semi-dry, sweet and sweet. Same taste as the sparkling Rosé (10.5% vol.), which is present in a pinkish shade and with a pleasant and fruity smell.
Grape production area
The province of Modena, where "Lambrusco Grasparossa di Castelverde" wines are produced, has a typically continental climate, due to the influence of the Apennine chain.
Specificity and historical notes
Lambrusco is considered the autochthonous vine par excellence, because the "vitis Lambrusca", mentioned by Catone, Varrone and Plinio, were wild vines that grew spontaneously. Only later did it begin to be cultivated in its own right.
