Locorotondo
"Locorotondo" is a Protected Designation of Origin that identifies a white wine produced both in the standard version and in the Superiore, Riserva, Spumante, Passito, Verdeca, Bianco d'Alessano and Fiano variants.
Grapes
Bianco Locorotondo and its variants Superiore, Riserva and Passito are produced with grapes from vineyards composed, for at least 50%, of Verdeca b. and at least 35% of Alessano b.. Other white grapes suitable for cultivation in Puglia, in the area of Alta Murgia and Salento Arco Jonico may also be included, up to a maximum of 35%. The only exceptions are wines with an indication of the vine variety. In this case, in fact, 85% of the grapes used consist of the mentioned variety, while the remaining part may include other white grapes grown in the area.
Physicochemical and Organoleptic properties
The Locorotondo Bianco (minimum total alcoholic strength by volume 11% vol.) and the Superiore (12% vol.) are pale straw-coloured, sometimes tending towards greenish. The aroma is delicate and characteristic and is combined with a dry, harmonious flavour, with a slightly bitter aftertaste. The Riserva (11% vol.), on the other hand, differs for the slightly spicy scents of its perfume and for the fullness of its taste. The Spumante (11% vol.) has a fine and persistent foam, while the flavour ranges from extrabrut to sweet and appears savoury, fresh, fine and harmonious. The Passito (15% vol.), on the other hand, has a more intense shade, which turns to golden; the aroma is characteristic and intense; the taste is sweet, harmonious and velvety. Grape production area
Locorotondo wines are produced in a rather limited area, between the provinces of Bari and Brindisi, in what is known as Valle d'Itria, in the Murgia.
Specificity and historical notes
The choice of the two main varieties, which are at the base of Locorotondo, is the result of a centuries-long tradition that has tried to make the most of the characteristics of the territory.
