Valdichiana Toscana
The Protected Designation of Origin "Valdichiana Toscana" includes the following wines: white (also in the virgin, sparkling and spumante variants), Chardonnay, Grechetto, red, rosé, Sangiovese, Vin Santo (also a Riserva).
Grapes
White wines are produced with at least 20% Trebbiano Toscano and a maximum of 80% Chardonnay, Pinot Bianco, Grechetto and Pinot Grigio, absolute or combined. Red and rosé wines, on the other hand, have at least 50% Sangiovese and a maximum of 50% Cabernet Franc and Sauvignon, Merlot and Sirah, either absolute or combined. In the variants with indication of grape variety, this must represent 85% of the total blend. Finally, Vin Santo base and Riserva contain at least 50% Trebbiano Toscano and Malvasia Bianca. In all types, to complete the missing quotas, may contribute grapes of berry varieties of similar color suitable for cultivation for the region of Toscana.
Physicochemical and Organoleptic properties
"Valdichiana toscana" wines have a minimum total alcholic strength by volume between 10% and 11% vol., which for Vin Santo reaches 15% vol. The whites have a characteristic straw colour, sometimes with greenish reflections; the aroma is neutral, rich and fragrant: the taste is dry, with an almond aftertaste. The red, on the other hand, has a characteristic bright ruby red colour, which tends towards garnet as it ages; the aroma is vinous and fruity; the flavour is savoury and harmonious. The rosé has a more or less intense pink colour, with a vinous and fragrant aroma and a harmonious and fresh taste. Finally, the Vin Santo, both in the basic version and in the reserve, has a straw color from amber to brown, the smell is ethereal and warm, the flavor is harmonious and velvety.
Grape production area
The production area of the "Valdichiana" is hilly, between 250 and 500 meters, is characterized by the presence of sands and sea clays, which are mixed together to create soils of various kinds.
Specificity and historical notes
The winemaking tradition in the area of the "Valdichiana toscana" has been witnessed since the Etruscan period.
