Valdinievole
The "Valdinievole" Protected Designation of Origin includes the following types of wine: White, Superiore White, Red, Superiore Red, Sangiovese and Vinsanto (or Vin Santo).
Grapes
White wines contain at least 70% Trebbiano toscano, while red wines have a minimum of 30% Sangiovese and 20% Cannaiolo (which together must reach at least 70%). For the production of these wines, grapes from similarly colored berry varieties may also be used, up to a maximum of 30%, as long as they are suitable for cultivation in the Toscana region. Sangiovese has a minimum of 85% of grapes from the homonymous vine, together with other vines suitable for cultivation in the Toscana Region, up to a maximum of 15%. Finally, Vinsanto contains at least 70% of Trebbiano Toscano, with which grapes of similarly colored berry varieties, identified as above, may be added, up to a maximum of 30%.
Physicochemical and Organoleptic properties
"Valdinievole" wines have a minimum total alcholic strength by volume that varies from 11% to 12.5% vol. and reaches 17% with Vin Santo. The white wines have a straw yellow colour tending towards light golden; the aroma is pleasant, with hints of flowers and fruit, while the taste is dry, harmonious and persistent. The basic red, the Riserva and the Sangiovese have the characteristic ruby colour, tending, with ageing, to violet and garnet; the bouquet is vinous with hints of red fruit; the flavour is dry and full. Vin Santo, on the other hand, has a golden to amber colour; the aroma is intense, ethereal and typical; the flavour is harmonious and ranges from dry to sweet, with a bitterish aftertaste.
Grape production area
The production area of "Valdinievole" is flat. Characteristic is the presence of alluvial soils, transported by the waterways that cross it. The geology is therefore uniform, with soils conducive to viticulture.
Specificity and historical notes
"Valdinevole" wines have been known since the Middle Ages; the wine-growing tradition therefore has a deep link with the territory. The ancient historical bond and a favourable environment for viticulture, make the "Valdinievole" a product of high value and quality.
