Vin Santo del Chianti
The Protected Designation of Origin "Vin Santo del Chianti" includes various types of wines, contained in three versions: basic, Occhio di Pernice and Riserva. There are also productions with specific sub-areas: Colli Aretini, Colli Fiorentini, Colli Senesi, Colline Pisane, Montalbano, Montespertoli and Rufina.
Grapes
The basic and Riserva versions of "Vin Santo del Chianti" are composed of at least 70% of Trebbiano Toscano and Malvasia Bianca Lunga, either absolute or combined. Grapes from similarly coloured berry varieties, suitable for cultivation in the Toscana region, may also be added, up to a maximum of 30%. The Occhio di Pernice version is made up of at least 50% Sangiovese and, for the remainder, grapes from similarly colored berry varieties, suitable for cultivation in the region of Toscana.
Physicochemical and Organoleptic properties
The basic "Vin Santo del Chianti" has a minimum total alcholic strength by volume of 15.5% vol., which increases to 16% vol. if accompanied by the sub-areas; the color is straw yellow, ranging from golden to amber; the smell is ethereal, intense and characteristic; the flavor, however, is harmonious and velvety, with good roundness if sweet and sweet. The "Occhio di Pernice" versions, with annexed sub-areas, have an alcohol content of 17% vol.; the colour ranges from more or less intense pink to deep amber; the aroma is warm and intense; the flavour is medium sweet or sweet, soft, velvety and round.
Grape production area
The production area of "Vin Santo del Chianti" is of a hilly type, in an altitude range not exceeding 700 metres above sea level. The protection of the hills mitigates the climate, making it from humid to sub-humid and therefore suitable for cultivation.
Specificity and historical notes
The cultivation of the vine, in the Chianti area and nearby, is prior to the Etruscan era. The link with the territory is therefore deep and historically well rooted. Over time, thanks to the skilful work of the winemakers and the activism of the industry, the conditions were created for the Vin Santo del Chianti to gain popularity and appreciation.
