Prosecco

The Prosecco Protected Designation of Origin is reserved for still white wines and sparkling and semi-sparkling versions.


Grapes

The "Prosecco" wines are made from grapes from the Glera vine for a minimum of 85%. In addition to this, the Verdiso, Bianchetta Trevigiana, Perera, Glera Lunga, Chardonnay, Pinot Blanc, Pinot Gris and Pinot Noir (vinified in white) varieties can also be added up to a limit of 15%.


Physicochemical and Organoleptic properties

The "Prosecco tranquillo", has a minimum total alcohol content by volume of 10.5% vol., a straw yellow color and is characterized by a fine smell and typical of the grapes of origin, combined with a fresh flavor and characteristic, ranging from dry to sweet. The sparkling wine type (11% vol.) has a brighter aspect, further enhanced by a persistent foam; the aroma maintains the same peculiarities of the basic version, while the taste is fresh and characteristic, ranging from brut to demi-sec. The Prosecco wine produced in the Sparkling type (10.5% vol.), also brilliant, shows an evident development of bubbles, which liven up its appearance and taste; the taste goes from dry to sweet. Some versions, traditionally produced by fermentation in the bottle, may show the presence of a veil.


Grape production area

The Prosecco production area, located in the north-eastern part of Italy, is flat with some hilly areas, a rather mild temperature thanks to the protective barrier provided by the Alps and the influence of the Adriatic Sea. The production area is located in the Veneto and Friuli Venezia Giulia regions. and in particular includes the provinces of Belluno, Gorizia, Padua, Pordenone, Treviso, Trieste, Udine, Venice and Vicenza.


Specificity and historical notes

The first written evidence of the existence of Prosecco wine dates back to 1600 and describes a white wine originating in the territory of the same name. Subsequently, in the 18th and 19th centuries, the production of this wine developed throughout the Friulian Veneto hilly area. Today, the peculiarities of Prosecco make it a recognizable product and appreciated by national and international consumers.
